CINNAMON BUNS

Durability 1 day

Can be frozen Yes

Pcs 10-12

Ingredients

Dough:

  • 500 g wheat flour
  • 1⁄4 tsp salt
  • 1⁄2 tsp cinnamon
  • 1⁄2 tsp powdered cardamon
  • 1⁄4 tsp vanilla sugar
  • 300 ml oat milk (or regular milk)
  • 60 g cane sugar
  • 20 g yeast
  • 1 pasteurized egg yolks
  • 60 g soft butter
  • 1 egg white for brushing
  • handfull of almonds for decoration

Remonce:

  • 80 g melted butter
  • 50 g cane sugar
  • 2 tsp cinnamon
  • 1⁄4 tsp vanilla sugar
  • 2 tsp almond butter

Directions

  1. Combine flour and spices in a big bowl.

  2. Dissolve the yeast in lukewarm milk. Add sugar and egg yolk. Mix

  3. Tilsæt mælkeblandingen samt smør i små tern til melblandingen.

  4. Stir the dough for 5 minutes in a mixer on the lowest setting until the dough is soft and smooth.
If the dough is too soft, add 2-3 tpsp flour.

  5. Knead the dough shortly on a floured surface.

  6. Cover the dough with a clean towel and let the dough rise for an hour.

  7. Mix all remonce ingredients to an even cream.

  8. Drizzle flour on a surface and roll out the dough in the shape of a rectangle (approx. 60 x 40 cm). Spread the soft remonce evenly on the dough.

  9. Fold the upper half on the broadside carefully over the lower part of the dough. Cut the dough with the filling into 10 stripes (about 6 cm thick). Cut into the separate dough stripes, but do not cut all the way through - so they look like pants. Twist the two dough stripes and roll them together to a round shape.

  10. Spread the cinnamon buns evenly on the baking trays that are covered with baking paper. Cover them and let them rise for an hour.

  11. Preheat the oven to 200 °C. Brush the cinnamon buns with egg white and press 1 or 2 almonds down into the middle of the dough.

  12. Bake them for 15 minutes until they are golden brown. Let them cool on the baking trays.

  13. Enjoy your pastry with your loved ones.
