CHRISTMAS HERRING FOR CHRISTMAS DINNER

This is how you make a home-made herring for Christmas. Here is the recipe for delicious and quickly made herring. Enjoy!

For an easy made herring you need:

  • 4 dl Heinz tomato ketchup
  • 4 dl sugar
  • 2 dl vinegar
  • 800 g drained herring (buy ready-made marinated white herring in a glass)
  • 20 slices of pickles, finely chopped
  • 2 big grated carrots
  • 2 big grated onions
  • 1 bunch of dill

Directions

  1. Pour out the brine from the white herring and dice the herring and put it aside
  2. Mix ketchup, sugar and vinegar together
  3. Add the diced white herring and carefully mix with the other ingredients
  4. Fill your GreenGate storage jar and let the Christmas herring sit for 3-4 days before you serve it with freshly baked bread.

 

TIP. Wash your GreenGate storage jar thoroughly with water mixed with dish soap and rinse afterwards with warm water. Then, put boiling water on the glas, lid and gummi rings before you fill the glass with food. The amount used in the recipe fills 2 GreenGate storage jars.

The Danish Christmas lunch is unthinkable without schnapps, rye bread, roast pork - and of course herring.

Even though most Danes cannot imagine Christmas without a Christmas lunch, the tradition is not as old as one may think. Christmas lunch first became a thing in the 1940s in some workplaces, where the workers got schnapps and Danish marcipan ring cake from their boss. Since the 1950s, Christmas lunch has become a strong tradition in almost all workplaces. Nowadays, Danes get plenty of opportunity to enjoy herring: most are invited to Christmas lunches both privately and at work.

According to tradition, the herring is eaten first. The variations are endless: curry herring, pickled herring, mustard herring, marinated, fried, etc.
